IPSWICH CIVIC CENTRE’S ROHAN DOWDY SHARES HIS FAVOURITE RECIPES AND COOKING TIPS
Executive Chef Rohan is back with another episode in this home-grown cooking series.
This month to coincide with Harmony Day celebrations at the Ipswich Civic Centre on 23 March Rohan has chosen Chicken Adobo – a dish from the Philippines.
2 tbsp garlic
2 tbsp soy sauce
2 tbsp oyster sauce
1 tsp dark soy sauce
1/2 tsp vinegar
2 bay leaves
1 tsp black peppercorns
Sprinkle of salt
3 potatoes cut in quarters (optional)
Saute garlic and chicken in a bit of cooking oil. Cook for 5 minutes.
Then put soy sauce, dark sauce, bay leaves, peppercorns altogether.
Let it boil and pour in vinegar.
Let it cook until half tender and put in the potatoes (which is optional but desirable).
Sprinkle with a bit of salt and keep on cooking until meat is tender.
Then pour in oyster sauce towards the end and mix thoroughly and cook for further 2 minutes.
